Sticking to the “T” theme for Tuesday, today is Taco Tuesday
and NO, I do not mean taco’s as in TacoBell funky fake meat, lord knows what else is in their tacos
I’m talking about good home made tacos using tortillas (or you can use hard taco shells-store bought or make your own) and some good healthy fixings to make your own.
Tacos allow for a lot of variety and versatility and are easy to fix.
Think outside of the normal beef, tomato, cheese, lettuce fillings…
You can use mahi mahi (or any other fish you like), shrimp, crab, lobster, chili, vegetables, the options are endless.
Enjoy some freshly made garnishes with your taco….salsa, avocado or guacamole.
I was contemplating putting some taco recipes here but figured y’all can handle heating up some fillings of your choice and slapping it on a tortilla, fold it up and enjoy!
Seriously though, let your imagination run wild…
whatever you like on yours, put it on.
Mine vary but usually include black olives, peppers (hot, sweet, green, red, yellow), lettuce, tomato, brown rice, garlic, onion…whatever I happen to have around.
If I’m making for others, stir fry some chicken and veggies and have that.
I make my own salsa too, again just throwing stuff in my tupperware hand food processor…tomatoes, variety of peppers, onion, garlic, cayenne pepper and whatever else I’m in mood for.
So, today for something quick, easy and versatile…have some taco’s!

I’m more of a soft-taco guy than a hard one, so for me, the shell is usually a soft one.
I like a variety of taco fixings… traditional ground beef or chicken is good, and I like the standard mix of lettuce (or spinach leaves), salsa, shredded cheese, jalapenos and sour cream. Simple and good.
I also like mixing things up, getting funky. A few weeks ago, I sauteed some garlic, onion, mushrooms and shrimp in some honey chipotle BBQ sauce, and instead of sour cream, used some light three cheese ranch dressing. Yum, me!
I’ve got an idea to try out a fish-and-chips taco – bake a couple breaded fish fillets and some french fries, then take a big knife, chop them up and mix together, put a little tartar sauce and ketchup inside the shell, top with some greens… haven’t tried it yet, but it sounds good.
