I recently was able to do a review of multiple Earth Balance and Smart Balance products (yes, they’re both made from the same company-you can learn more about the two brands here).
I was able to get Smart Balance milk, Smart Balance peanut butter and Earth Balance natural butter spread locally at Publix.
I look forward to Whole Foods opening in Pembroke Pines so I can get some coconut spread and some of the other items that are made specifically by Earth Balance.
The peanut butter is delicious by itself, in cookies (recipe below), and even on rice cakes!
The milk is great with Uncle Sam’s Cereal too.
and of course, what else could you do with a natural butter spread and peanut butter…but make peanut butter cookies!
Peanut butter cookie recipe
Ingredients:
1/2 cup Earth Balance Natural Butter Spread
1/2 cup Smart Balance Peanut Butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 1/4 c. flour
1/2 tsp baking powder
3/4 tsp baking soda
1 egg
Directions
Cream butter spread, sugars and peanut butter together.
Beat in egg.
Add the baking soda, baking powder and flour and mix.
Form balls with the dough and place on baking sheet.
Dip a fork in sugar and make the “criss cross” on the cookie flattening the ball somewhat.
Bake in oven at 375 degrees for approximately 8-10 minutes.
They carry many vegan options as well (which I look forward to when I can get to Whole Foods).

(Note: I had a hard time finding many of the items that they carry that I want to try-am hoping Whole Foods opens quickly in my area or I’ll be driving 30 minutes north to visit one!)
