Salad:
* 1 small purple cabbage, shredded
* 1 bunch fresh parsley
* 1 small red onion
* 1/2 cup unsalted raw sunflower seeds and/or chopped walnuts
Dressing:
* 3 Tbsp. olive oil
* 2 Tbsp. red wine vinegar
* 1 tsp. dried dill
* Salt and fresh ground pepper to taste
Shred cabbage in a large bowl. Remove stems from parsley and finely chop. Slice and chop onion. Toss parsley, onion, and seeds and/or nuts with cabbage.
To prepare the dressing, place vinegar and dill in a small bowl and whisk together. Add oil slowly, whisking constantly until well blended. For a tangier flavor, add more red wine vinegar.
Add dressing to salad, and toss until is well saturated. Cover the bowl with a lid or plastic wrap and let sit in the fridge for at least an hour to let the flavors blend. Add salt and pepper to taste.
